Quick post here...it's left overs! It doesn't have to look like it, or taste like it.
Lamb salad...behind the cut.
I made a whole semi-boneless leg of lamb for Easter. We had it on sandwiches, we had it with other side dishes...tonight, we had it in a salad.
Lamb salad:
- lamb, cubed
- fresh spinach leaves
- romaine hearts, chopped
- cucumber, halved, sliced
- tomato, cubed
- red onion, sliced thin
- feta cheese, crumbled
- balsamic vinaigrette
Done. Join me as I dine...on left overs!
